Basil, Watercress and Spinach Pesto

green pesto in mason harThis fresh twist on the classic herb sauce has extra zip thanks to peppery watercress, one of my favourite greens. If you can’t find watercress, feel free to substitute additional basil, arugula or parsley. The vibrant green colour and garlicky flavour of this pesto make for a wonderful addition to pasta, pizza, soups or sandwiches.
Vegan, gluten-free.

This pesto is perfect for making Pesto Pasta Salad with Asparagus and Cherry Tomatoes.

Ingredients
  1. ½ cup cashew pieces
  2. 1-2 cloves fresh garlic, de-veined (cut clove in half and remove the sprout inside – this makes raw garlic a little less potent and more digestible)
  3. 1 Tbsp nutritional yeast (optional)
  4. 1 tsp sea salt
  5. ¼ tsp freshly ground pepper
  6. 2 cups fresh basil, packed into measuring cup
  7. 2 cups fresh watercress, packed
  8. 2 cups fresh baby spinach, packed
  9. Juice of 1 lemon
  10. ½ cup high quality extra-virgin olive oil
Instructions
  1. In bowl of a food processor, pulse together cashews, garlic, nutritional yeast, salt and pepper until finely ground.
  2. Add greens and lemon juice. Pulse until finely chopped
  3. With food processor running, drizzle olive oil in slowly until pesto is well-combined and almost smooth, scraping down the sides as necessary.
  4. Store pesto in a tightly-covered glass jar for up to 1 week.
Notes
  1. You can also freeze portions in an ice cube tray, then transfer cubes to a freezer bag for quick and easy use.
