This is the perfect baking project for a snow day! These hearty Oatmeal Cranberry Coconut cookies are studded with chia seeds, hemp hearts and cacao nibs. They're a satisfying treat for an afternoon of sledding or skiing. Vegan, nut-free, gluten-free option.

Ingredients
  1. 2 Tbsp whole chia seeds
  2. 6 Tbsp water
  3. 2 tsp pure vanilla extract
  4. ½ cup non-dairy milk of choice (plus more if needed)
  5. ½ cup extra virgin coconut oil, melted
  6. 2 cups quick oats
  7. 1 cup oat flour (or substitute whole grain flour of choice)
  8. 1 cup coconut palm sugar or sucanat
  9. 1 tsp baking soda
  10. ½ tsp ground cinnamon
  11. ¼ tsp sea salt
  12. ½ cup hemp hearts
  13. ½ cup unsweetened shredded coconut
  14. ½ cup dried cranberries
  15. ¼ cup raw cacao nibs
Instructions
  1. In a medium bowl, mix chia seeds with water and set aside for 30 minutes
  2. Preheat oven to 375F and line 2 large baking sheets with parchment paper.
  3. Add vanilla, non-dairy milk and coconut oil to chia mixture. Mix well and set aside.
  4. In a large bowl, combine oats, flour, sugar, baking soda, cinnamon and salt. Mix well.
  5. Stir into dry ingredients the hemp hearts, coconut, cranberries and cacao nibs.
  6. Add wet mixture to dry mixture and combine well. If mixture seems dry, add a little more milk a tablespoon at a time until dough comes together,
  7. Drop dough by heaping tablespoons onto prepared baking sheets.
  8. Bake for 13 minutes, or until edges are golden brown. Allow to cool for 5 minutes on baking sheet before removing to wire rack to finish cooling.
  9. Store cooled cookies in a sealed container in the fridge or freeze for optimal freshness.
