Pesto Pasta Salad with Asparagus and Cherry Tomatoes
A fresh pesto pasta salad incorporating fresh asparagus and bright cherry tomatoes. At other times of the year, feel free to substitute lightly-blanched broccoli or green beans. Vegan, gluten-free option.

Ingredients
  1. 1 – 454 g package whole grain or gluten-free pasta (I like Ancient Grains)
  2. 1 bunch fresh asparagus, trimmed and cut into bite-size pieces
  3. 1 pint cherry tomatoes, halved
  4. ½ cup home-made pesto sauce
  5. 2 Tbsp warm water (or more as needed)
  6. Freshly squeezed lemon juice and extra virgin olive oil to taste
  7. Salt and pepper to taste
Instructions
  1. Cook pasta in boiling, salted water according to package directions. During the last minute of cooking, add the chopped asparagus – be very careful not to overcook!
  2. Drain pasta and rinse under cold water to cool. Drain well.
  3. In a large bowl, whisk the pesto with the warm water. Add additional lemon juice and olive oil to achieve the consistency of a thick salad dressing.
  4. Add pasta, asparagus and cherry tomatoes. Toss gently to coat with the sauce. Season to taste with additional salt and freshly ground pepper.
  5. Serve immediately or refrigerate. This salad keeps well for up to 3 days in the refrigerator.
